Today in this video, I'm sharing how to cook delicious Aubergine (Small Brinjal, Chotti Baingan, Eggplant) with Peanut and Coconut. Believe me, if you cook once then you're gonna cook again-n-again and will get lots of kudos from your family members.

So, let's start cooking delicious aubergine without wasting any time...

== INGREDIENTS ==
- 300 gm Small Aubergine (छोटे बैंगन)
- 2 tsp Peanuts (मूंगफली)
- 2 tsp Coconut Powder (नारियल पाउडर)
- 2 Fine Chopped Onions (कटा हुआ प्याज)
- 4-5 Chopped Green Chillies (कटी हुई हरी मिर्च)
- 1 tsp Garlic Ginger Paste (लहसुन अदरक का पेस्ट)
- 1/2 tsp Turmeric Powder (हल्दी पाउडर)
- 1/4 tsp Chilli Powder (मिर्च पाउडर)
- 1/2 tsp Cumin Powder (जीरा चूर्ण)
- 1/2 tsp Garam Masala (गरम मसाला)
- 1/2 Coriander Powder (धनिया पाउडर)
- Few Chopped Coriander Leaves (कटा हुआ हरा धनिया)

== METHOD ==
- Take 300 gm of washed Small Aubergine (Eggplant)
- Chop off stem of each aubergine
- Slice quarterly from tail to 90% (keep all attached)
- Look inside carefully to verify it is clean and has no worms
- Similarly cut all aubergines
- We will also need 2 tsp of Peanuts and 2 tsp of Coconut Powder
- Roast peanut for a minute on medium flame
- Then turn off the flame and add coconut powder to pan to roast with peanuts
- Keep stirring continuously to prevent over roast and stickiness of coconut powder
- After 10-15 seconds take out in a bowl
- Grind roasted peanut and coconuts to powder
- Let the pan heat again and add 2 tsp of cooking oil
- Once oil is heat enough, move all aubergine into pan and fry in all sides
- Stir and roast up to 30%, then take out in a plate
- Add 2 more tsp of oil in pan again
- Once oil heat, then add 2 fine chopped onion
- Fry onion on high flame until softens
- Then add 4-5 chopped green chillies,
- And 1 tsp Garlic Ginger Paste
- And fry for a minute by continuously stirring
- Then add 1/2 tsp Turmeric, Cumin and Coriander Powder, 1/4 tsp Chilli Powder and 1/2 tsp Garam Masala
- And fry for a minute by continuously stirring
- Then add 1 chopped tomato
- Mix and fry tomato as well with spices
- Then add peanut and coconut powder
- And mix well with spices
- Add some water if it seems dry and mix again
- Then cover the pan lid and turn the flame to low
- In every 1 minute open the lid and mix to prevent over fry at bottom side
- Repeat the process until spices starts releasing oil
- Add 200 ml of water and stir to mix well
- Add 1/2 tsp of Salt (or to taste)
- Then mix all and add fried Aubergine to gravy
- Mix Aubergine with gravy and close the pan lid
- Turn the flame to medium and let it fry for 3-4 minutes or until cooks properly
- After 3-4 minutes check if Aubergine has cooked well or not
- Sprinkle some chopped coriander leaves and mix
- Now it is ready to serve and eat
