Hello Friends,
Today, in this video I'm sharing our's very popular traditional Indian Gujiya recipe. Which is so much popular and loved by all of us. So, let's start cooking "Khoya Special Gujiya (Gujia)"...
Ingredients:

- 4 cup Fine Flour / Maida (मैदा)
- 150 ml Ghee (घी)
- 200 gm Mava / Khoya (खोया)
- 50 gm Raisins (किशमिश)
- 20-25 Sliced Almonds (बादाम)
- 20-25 Chopped Cashew Nuts (काजू)
- 20-25 Chopped Pistachio (पिस्ता)
- 1/4 tsp Green Cardamom Powder (हरी इलायची पाउडर)
- 2 tbsp Sugar Powder (चीनी)
- Refined Oil or Ghee as Required (रिफाइंड तेल या घी)
Cooking Time: 30 mins
Method:

- In a mixing bowl take 4 cup (250gm) of Fine Flour (Maida)
- And add 100 ml of Ghee and thoroughly mix with Maida by rubbing
- Add more ghee as required and mix until flour feels moistened
- Then start adding some water as required and make dough
- Dough will be little dry than regular dough
- When ready, cover this and keep aside to rest for 10 minutes
- [ LIST INGREDIENTS ]
- Now we will fry all these
- Put a pan on stove to heat and add 2 tbsp of Ghee
- Once Ghee is heated and melted, add sliced Almonds and roast for 10-15 seconds,
- Then add chopped Cashew nuts and Pistachio and roast for a minute together,
- After a minute add Raisins and roast
- Once Raisins starts blooming then add Khoya (Mava) or Condensed Milk and stir to mix well
- Turn the flame to medium and keep mixing until Mava starts melting
- Then add 1/4 tsp Green Cardamom Powder and 2 tbsp Sugar Powder
- And stir to mix well for a more minute
- Once Ghee starts releasing a bit then turn the flame off
- And take out in a bowl and let it rest until temperature comes down to normal
- Now check the maida dough and knead again to mix and soften
- Create lemon sized balls from dough
- And roll out to thin breads, little bigger than Gujiya mold
- Put on mold and fill stuffing
- Wet the edges of rolled dough by water to gets sealed
- And carefully close the mold to wrap and press harder to lock
- Remove the extra dough coming out of mold
- Then open the mold and take Gujiya out carefully
- Now stuffing Gujiya without mold
- Roll a dough ball into small bread and cut circular using a sharp edge bowl
- Remove the extra dough
- Put some stuffing in the center
- Wet the edges using wet finger to seal
- Now lift both sides and stick by wrapping the stuffing
- Then press the edges to perfectly seal
- Also gently press the edges using a fork, like showing in video
- This will give a nice pattern and strong binding to edges
- Similarly prepare all raw Gujiyas
- Once all is ready, we will deep fry all the raw Gujiya
- Put a pan on stove to heat and half fill by Refined Oil or Ghee
- Keep the flame to medium
- Once oil is heated move the raw Gujiyas into it
- Do not overload the pan, maintain the distance between Gujiyas
- Flip over all the Gujiyas to fry all sides evenly
- Take out once turns golden brown, will take 2-3 minutes max
- Similarly fry others if left any
