In this video today, I'm sharing a recipe to cook "Brinjal/Eggplant spicy sauce". You won't have seen this recipe before. Taste of this recipe is too good, that brinjal haters will also start demanding more to this food. It just takes 5-6 minutes to prepare and cook. Everyone likes this food once tries. So, let's start cooking Brinjal/Eggplant spicy sauce ...

Ingredients:


- 200 gm Brinjal (बैंगन)
- 4 tbsp Mustard or Any cooking Oil (सरसों का तेल)
- 1/2 tsp Cumin (जीरा)
- 1 nos Onion (प्याज)
- 3 nos Green Chillies (हरी मिर्च)
- 1 & 1/2 tsp Garlic Ginger paste (लहसुन और अदरक का पेस्ट)
- 1/2 tsp Fenugreek (मेंथी)
- 1/2 tsp Cumin Powder (जीरा चूर्ण)
- 1/4 tsp Garam Masala (गरम मसाला)
- 3-4 stem Coriander Leaves (धनिये के पत्ते)
- 1/2 nos Lemon (नींबू)

Method:


- Take 200 gm of washed Brinjal
- Cut in 4 pieces without detaching
- It helps to cook faster and can be check for quality inside out
- Use a roasting net for gas burner or other better option available
- Make sure Brinjal is roasted all around and deep inside
- Stab a knive inside to check it is cooked deep inside
- Let it cool down
- Peel off the skins completely and chop off the tail part
- Then chop the cooked Brinjal in many pieces
- Put a pan on burner to heat
- Add 4 tbsp of mustard oil once pan is heated
- In few seconds add 1/2 tsp of Cumin
- Add one medium fine chopped Onion once Cumin changes color a bit
- Stir to mix and fry until softens and changes color a bit
- Add 3 nos of Chopped Green Chillies
- Stir to mix and fry
- Add 1 & 1/2 tsp of Garlic and Ginger paste
- Stir to mix and fry for 10-15 seconds
- Add spices 1/2 tsp of Fenugreek
- 1/2 tsp of Cumin Powder
- And 1/4 tsp of Garam Masala
- Stir to mix and fry for 10-15 seconds
- Add 1 medium chopped Tomato
- Stir to mix and add 1/2 tsp of Salt or to taste
- Turn the flame to low and cover the pan for a minute
- Stir to shuffle again and add roasted Brinjal
- Stir well by crushing Brinjal
- Turn the flame to low and cover the pan again for a minute
- Stir to mix again
- Add some chopped Coriander leaves
- Mix again and turn the flame off
- It is ready to serve now
- Add 1/2 lemon juice
