My easy recipe will help you to cook so tempting and delicious Hakka Noodles in your home, fresh and hygiene without any harmful chemical. So, let's start cooking Hakka Noodles ...

INGREDIENTS:
------------------------
- 200 gm Raw Noodles (कच्चा नूडल्स)
- 1 tsp or to taste Salt (नमक)
- 5 tsp Cooking Oil (खाना पकाने का तेल)
- 1 nos Chopped Onion (कटा हुआ प्याज)
- 2 stem Chopped Spring Onions (कटा हुआ वसंत प्याज)
top & bottom part separated (ऊपर और नीचे का हिस्सा अलग)
- 1 nos Chopped Capsicum (कटी हुई शिमला मिर्च)
- 1 nos Chopped Carrot (कटा हुआ गाजर)
- 100 gm Chopped Cabbage (कटा हुआ गोभी)
- 2 nos Chopped Green Chillies (कटी हुई हरी मिर्च)
- 1/2 nos Lemon (नींबू)
- 1/2 tsp Ginger Garlic Paste (अदरक लहसुन का पेस्ट)
- 1 tbsp Vinegar (सिरका)
- 1 tbsp Dark Soya Sauce (डार्क सोया सॉस)
- 1.5 tbsp Dark Soya Sauce (डार्क सोया सॉस)
- 1 tbsp Green Chilli Sauce (हरी मिर्च सॉस)
- 1/4 tsp Black Pepper Powder (काली मिर्च पाउडर)

METHOD:
----------------
- Take 200 gm of Raw Noodles
- Take a pot filled with 1 ltr of drinking water and put on stove and wait till boil
- Once water starts boiling add 1/2 tsp Salt and 2 tsp Cooking Oil
- Now move Raw Noodles into it
- Stir using a spoon to dip properly in water
- Wait for few minutes to cook noodles
- It should be cooked upto 80-85%
- Take out a stem of noodles and try to break
- If it breaks easily then it is ready now
- Separate noodles from water using any type of filter
- Bath noodles from cold (normal) water
- It will help noodles to not stick to each one after boil
- Shuffle the noodles by hand
- Till noodles are cooling down, we will prepare spices
- Take a big pan and put on stove to heat
- Spread 3 tsp Cooking Oil higher all around the pan
- Veggies ingredients required for Hakka Noodles
- 1 Onion, 2 stem Spring Onions, 1 Capsicum, 1 Carrot, 100 gm Cabbage, 2 Green Chillies & 1/2 Lemon
- Add 1/2 Ginger Garlic Paste and 1 sliced Green Chillies once oil is heated
- Stir to roast properly for few seconds
- Add 1 nos of Chopped Onion
- Stir to saute for 12-15 seconds
- Add top (white) part of sliced Spring Onions and 100 gm of Cabbage
- Turn the flame to high and saute for few seconds
- Add 1 nos of each Chopped Carrot and Capsicum
- Stir well and fry for a minute on high flame
- Time to add sauces now
- Add 1 tbsp Vinegar
- Add 1 tbsp Dark Soya Sauce
- Add 1.5 tbsp Red Chilli Sauce
- Add 1 tbsp Green Chilli Sauce
- Stir to mix all well
- Add 1/4 tsp or to taste Salt
- Add 1/4 tsp Black Pepper Powder
- Stir to mix all well
- Add boiled noodles
- Thoroughly and gently mix noodles with veggies and sauces
- A spatula and fork can be easier to mix
- Mix until veggies and sauces completely intermingles
- Then turn off the flame and serve it
- Take out in a plate and sprinkle green (bottom) part of Spring Onions
- Squeeze 1/2 Lemon (first taste if noodle is not already too sour)
- Also Tomato Sauce/Ketchup can be used
