Ingredients:
------------------
- 200 gm Chickpea (काबुली चना)
- 4-5 nos Bay Leaves (तेज पत्ता)
- 1.5 inch Cinnamon (दालचीनी)
- 2 nos Green Cardamom (हरी इलायची)
- 1 nos Black Cardamom (काली इलाइची)
- 4-5 nos Cloves (लौंग)
- 1 tsp Salt or to taste (नमक स्वादअनुसार)
- 2 pinch Baking Soda (बेकिंग सोडा)
- 3 nos Tomatoes (टमाटर)
- 3 nos Onions (प्याज)
- 4-5 nos Green Chillies (हरी मिर्च)
- 1/2 tsp Turmeric Powder (हल्दी पाउडर)
- 1/2 tsp Coriander Powder (धनिया पाउडर)
- 1/2 tsp Cumin Seeds Powder (जीरा पाउडर)
- 1 & 1/2 tsp Kashmiri Red Chilli Powder (कश्मीरी लाल मिर्च पाउडर)
- 1/2 tsp Dry Mango Powder (अमचूर पाउडर)
- 1 tsp Fenugreek Seeds (मेथी बीज)
- 1/2 tsp Garam Masala (गरम मसाला)
- 1 & 1/2 tsp Garlic and Ginger Paste (लहसुन और अदरक का पेस्ट)
- 2 pinch Asafoetida (हींग)
- 1/2 cup Coriander Leaves (धनिये के पत्ते)
- 1/2 cup Cooking Oil (खाना पकाने का तेल)
Method:
------------
- Take 200 gm of soaked Chickpea and boil
- Transfer soaked Chickpea in a pressure cooker
- Add 500 ml of drinking water
- Add 4-5 Bay Leaves,
- 1.5 inch of Cinnamon,
- 2 nos of Crushed Green Cardamom,
- 1 nos of Crushed Black Cardamom,
- 4-5 nos of Cloves,
- 1/2 tsp of Salt,
- And 2 pinch of Baking Soda
- Close the cooker lid and put on stove and wait till 4-5 whistle comes
- Until Chickpea is boiling, we do next steps
- Ingredients to make Tomatoes/Onions puree
- 3 Roughly Chopped Tomatoes
- 2 Roughly Chopped Onions
- And 4-5 Green Chillies
- Grind all these to puree
- "More ingredients showing"
- Take 1/2 tsp of Turmeric powder,
- 1/2 tsp of Coriander powder,
- 1/2 tsp of Cumin Seeds powder,
- 1 & 1/2 tsp of Kashmiri Red Chilli powder,
- 1/2 tsp of Dry Mango powder or Tamarind or Lemon juice
- "More ingredients, Other than this is"
- 1 tsp of Fenugreek seeds,
- 1/2 tsp of Garam Masala,
- 1 & 1/2 tsp of Garlic and Ginger Paste,
- 1 fine sliced Onion,
- 2 pinch of Asafoetida
- And 1/2 cup of Chopped Coriander Leaves
- "Now Chickpea has been boiled"
- Only open the pressure cooker when all pressure released itself
- Check whether Chickpea has completely boiled or not
- Mash any Chickpea by hand, if it mashed so easily then it is ready
- Now takeout (filter) all the raw spices other than Cloves
- Such as Bay Leaves, Black & Green Cardamom & Cinnamon
- Now put a pan on stove
- Add 1/2 cup of Cooking Oil when pan is heated
- Add sliced onion in few seconds
- Stir and saute for a minute or until softens and changes color
- Add Garlic and Ginger paste and saute for 10-15 seconds
- Then add dry spices
- Like Turmeric, Coriander, Cumin Seeds, Kashmiri Red Chilli and Dry Mango Powder
- Stir to mix and saute for 15 seconds
- Then add Tomatoes and Onions puree
- Stir to mix well and close the lid
- After a minute remove the pan lid and stir
- Repeat the same process until releases oil from gravy and a good smell comes
- Add 1 tsp of Fenugreek Seeds,
- 2 pinch of Asafoetida,
- And 1/2 tsp of Garam Masala
- Stir to mix well
- Now transfer boiled Chickpea into pan with water carefully
- Stir to mix well
- Add Salt to taste, We already have used Salt while boiling Chickpea
- Mix well
- Close the pan lid and cook for 3-4 more minutes on medium flame
- Remove the lid and stir again
- Chole is ready now, turn the flame off and serve
- Garnish with Chopped Coriander Leaves
