आज के इस वीडियो में मै बहुत ही स्वादिस्ट और लाज़वाब कड़ाही मशरूम बनाने की रेसिपी शेयर कर रही हूँ। एक बार आप अगर गलती से बनाकर इसे खा लिए तो इसके दीवाने हो जाओगे और बार बार बनाओगे। पराठा और पूरी के साथ तो इसका स्वाद और भी दो गुना हो जाता है। तो चलिए स्वादिस्ट कड़ाही मशरूम की सब्जी बनाना शुरू करते है ...

In this video of today, I am sharing the recipe of making very tasty and wonderful kadahi mushrooms. Once you cook it by mistake and eat it, then you will become crazy and make it again and again. With paratha and puri, it tastes even more twofold. So let's start making the swadist kadhai mushroom vegetable ...

Ingredients:

  1. 200 gm Mushrooms (मशरूम)
  2. 5-6 tbsp Cooking Oil (खाना पकाने का तेल)
  3. 2-3 nos Green Chillies (हरी मिर्च)
  4. 4 nos Onions (प्याज)
  5. 2 nos Capsicums (शिमला मिर्च)
  6. 3-4 slices Dry Coconut (सूखा नारियल)
  7. 1/2 tsp Fenugreek Seeds (मेथी बीज)
  8. 1 tsp Cumin Seeds (जीरा)
  9. 3-4 nos Whole Dry Red Chillies (साबुत सूखी लाल मिर्च)
  10. 4-5 nos Cashew Nuts (काजू)
  11. 2 nos Bay Leaves (तेज पत्ता)
  12. 4-5 nos Cloves (लौंग)
  13. 2 nos Green Cardamoms (हरी इलायची)
  14. 1 stick Cinnamon (दालचीनी)
  15. 1 tsp Coriander Seeds (धनिया के बीज)
  16. 1 nos Black Cardamom (काली इलाइची)
  17. 10-12 nos Curry Leaves (करी पत्ते)
  18. 1 tsp Ginger Garlic Paste (अदरक लहसुन का पेस्ट)
  19. 1/4 tsp Black Pepper Powder (काली मिर्च पाउडर)
  20. 2 nos Tomatoes Puree (टमाटर की प्यूरी)
  21. 100 ml Water (पानी)
  22. 1/2 tsp Salt or to taste (नमक)!@
  23. 1/4 tsp Garam Masala (गरम मसाला)
  24. Some Chopped Coriander Leaves (धनिये के पत्ते)

Method:

  1. Take 200 gm of Mushrooms and split each one in two
  2. Take a pan to heat and add 2-3 tbsp of Cooking Oil
  3. Once oil heats add 2-3 Green Chillies sliced in to two,
  4. 3 sliced Onions,
  5. 2 sliced Capsicum,
  6. And 200 gm of Mushrooms
  7. Turn the flame to medium
  8. And fry until it cooks 30-40%
  9. Meanwhile roast following dry spices in a pan:
    • 3-4 slices of Dry Coconut,
    • 1/2 tsp of Fenugreek Seeds,
    • 1/2 tsp of Cumin Seeds,
    • 3-4 nos of Whole Dry Red Chillies,
    • 4-5 nos of Cashew Nuts,
    • 2 nos of Bay Leaves,
    • 4-5 nos of Cloves,
    • 2 nos of Green Cardamoms,
    • 1 stick of Cinnamon,
    • 1 tsp of Coriander Seeds,
    • 1 nos of Black Cardamom
  10. Roast on low flame until, nice aromatic smells start coming
  11. Also keep veggies stirring in between
  12. Once spices are roasted then take out in a plate and let it cool
  13. Take frying mushrooms out in a bowl
  14. Add 2-3 tbsp of Cooking Oil in same pan
  15. Then add 1/2 tsp of Cumin Seeds,
  16. 10-12 nos of Curry Leaves,
  17. And 1 fine chopped Onion
  18. Fry until Onion turns golden brown on medium flame
  19. Now grind all the roasted spices
  20. Take grinded spices in a bowl
  21. Now check back frying onion and
  22. Add 1 tsp of Ginger Garlic Paste and fry for 10-15 seconds,
  23. Then add 1/4 tsp of Black Pepper Powder and fry for few seconds,
  24. After that add puree of 2 Tomatoes
  25. Stir to mix well and fry until oil start releasing from spices
  26. Then add roasted and grinded spices
  27. Stir to mix well and let it fry for a minute
  28. And add fried mushrooms and other veggies
  29. Stir and mix well
  30. Add 100 ml of Water,
  31. 1/2 tsp of Salt or to taste,
  32. And 1/4 tsp of Garam Masala
  33. Mix well
  34. Close the pan lid and cook for 3-4 mins on low flame
  35. After that remove the lid and stir to mix
  36. Turn the flame off and serve
  37. Sprinkle some chopped Coriander leaves to garnish
