Ingredients:
- 200 gm Mushrooms (मशरूम)
- 5-6 tbsp Cooking Oil (खाना पकाने का तेल)
- 2-3 nos Green Chillies (हरी मिर्च)
- 4 nos Onions (प्याज)
- 2 nos Capsicums (शिमला मिर्च)
- 3-4 slices Dry Coconut (सूखा नारियल)
- 1/2 tsp Fenugreek Seeds (मेथी बीज)
- 1 tsp Cumin Seeds (जीरा)
- 3-4 nos Whole Dry Red Chillies (साबुत सूखी लाल मिर्च)
- 4-5 nos Cashew Nuts (काजू)
- 2 nos Bay Leaves (तेज पत्ता)
- 4-5 nos Cloves (लौंग)
- 2 nos Green Cardamoms (हरी इलायची)
- 1 stick Cinnamon (दालचीनी)
- 1 tsp Coriander Seeds (धनिया के बीज)
- 1 nos Black Cardamom (काली इलाइची)
- 10-12 nos Curry Leaves (करी पत्ते)
- 1 tsp Ginger Garlic Paste (अदरक लहसुन का पेस्ट)
- 1/4 tsp Black Pepper Powder (काली मिर्च पाउडर)
- 2 nos Tomatoes Puree (टमाटर की प्यूरी)
- 100 ml Water (पानी)
- 1/2 tsp Salt or to taste (नमक)!@
- 1/4 tsp Garam Masala (गरम मसाला)
- Some Chopped Coriander Leaves (धनिये के पत्ते)
Method:
- Take 200 gm of Mushrooms and split each one in two
- Take a pan to heat and add 2-3 tbsp of Cooking Oil
- Once oil heats add 2-3 Green Chillies sliced in to two,
- 3 sliced Onions,
- 2 sliced Capsicum,
- And 200 gm of Mushrooms
- Turn the flame to medium
- And fry until it cooks 30-40%
- Meanwhile roast following dry spices in a pan:
- 3-4 slices of Dry Coconut,
- 1/2 tsp of Fenugreek Seeds,
- 1/2 tsp of Cumin Seeds,
- 3-4 nos of Whole Dry Red Chillies,
- 4-5 nos of Cashew Nuts,
- 2 nos of Bay Leaves,
- 4-5 nos of Cloves,
- 2 nos of Green Cardamoms,
- 1 stick of Cinnamon,
- 1 tsp of Coriander Seeds,
- 1 nos of Black Cardamom
- Roast on low flame until, nice aromatic smells start coming
- Also keep veggies stirring in between
- Once spices are roasted then take out in a plate and let it cool
- Take frying mushrooms out in a bowl
- Add 2-3 tbsp of Cooking Oil in same pan
- Then add 1/2 tsp of Cumin Seeds,
- 10-12 nos of Curry Leaves,
- And 1 fine chopped Onion
- Fry until Onion turns golden brown on medium flame
- Now grind all the roasted spices
- Take grinded spices in a bowl
- Now check back frying onion and
- Add 1 tsp of Ginger Garlic Paste and fry for 10-15 seconds,
- Then add 1/4 tsp of Black Pepper Powder and fry for few seconds,
- After that add puree of 2 Tomatoes
- Stir to mix well and fry until oil start releasing from spices
- Then add roasted and grinded spices
- Stir to mix well and let it fry for a minute
- And add fried mushrooms and other veggies
- Stir and mix well
- Add 100 ml of Water,
- 1/2 tsp of Salt or to taste,
- And 1/4 tsp of Garam Masala
- Mix well
- Close the pan lid and cook for 3-4 mins on low flame
- After that remove the lid and stir to mix
- Turn the flame off and serve
- Sprinkle some chopped Coriander leaves to garnish
