In this video of today I am sharing the recipe of making Pumpkin koftas. So much delicious which can be eaten with both Rice and Roti. With best taste. So let's start making gourd koftas ...

Ingredients:

- 250 gm Baby Pumpkin (लौकी)
- 5 tsp Gram Flour (बेसन)
- 1/2 + 1/4 tsp Turmeric Powder (हल्दी पाउडर)
- 1/2 + 1/4 tsp Red Chilli Powder (लाल मिर्च पाउडर)
- 1/2 + 1 tsp Coriander Powder (धनिया पाउडर)
- 1/2 + 1 tsp Ginger Garlic Paste (अदरक लहसुन का पेस्ट)
- 1/2 tsp Salt or to taste (नमक)
- 1/2 tsp Cumin (जीरा)
- 1/2 tsp Celery (अजवायन)
- 1/2 tsp Fenugreek (मेंथी)
- 1 nos of Fine Chopped Onion (प्याज)
- 1/4 tsp Cumin Powder (जीरा पाउडर)
- 1/4 tsp Dry Mango Powder (आमचूर)
- Few Chopped Coriander Leaves (धनिये के पत्ते)

Method:

- Take a 250 gm of Baby Pumpkin
- Peel of the Skin and Grate it
- Move in a mixing bowl and add 4 tsp of Gram Flour,
- Add 1/2 tsp of Turmeric Powder,
- 1/2 tsp of Red Chilli Powder,
- 1/2 tsp of Coriander Powder,
- 1/2 tsp of Ginger Garlic Paste,
- 1/2 tsp of Salt or to taste
- Mix all well and make paste
- "Do not add water"
- Take a pan to heat, filled with 1/2 ltr of Refined or Mustard Oil
- When it is heated
- Now fry pakodas, give it a lemon like size and put into oil
- In 2-3 minutes, flip all to fry other side as well
- Once it turns golden brown and crispy, take it out
- Similarly fry all if left any more
- Take a pan to heat again and add 2-3 tsp Cooking Oil
- Once oil heated, then add 1/2 tsp each of Cumin, Celery and Fenugreek,
- With 3-4 nos Bay Leaves
- When Cumin fried and changes color, add 1 Fine Chopped Onion
- Fry until onion fries and turns little brown
- Add 4-5 nos Fine Chopped Green Chillies
- When onion is brown add 1 tsp of Ginger Garlic Paste
- Fry for one more minute
- Then add dry spices:
- 1 tsp of Coriander Powder,
- 1/4 tsp of Dry Mango Powder,
- 1/4 tsp of Cumin Powder,
- 1/4 tsp of Red Chilli Powder,
- 1/4 tsp of Turmeric Powder
- Stir and fry for a minute
- Add 1 tsp of Gram Flour
- Stir and fry for one more minute on medium flame
- After that add Puree of 2 Tomatoes
- Mix well and fry until it starts releasing oil
- Turn the flame high
- Close the pan lid
- In few minutes it will be ready
- Stir and add 200 ml of Water,
- 1/2 tsp of Salt or to taste,
- 1/2 tsp of Garam Masala
- Mix well
- Close the lid and wait till it starts boiling
- Then add fried Kofta pakodas
- Mix again
- Turn the flame to low and cover the pan lid for 3-4 minutes
- After that remove the lid and serve
- Garnish with chopped coriander leaves for more better flavor
