Hello friends,
In this video of today I am sharing the recipe of making potato samosa. Very tasty, very market-like, easy to make crispy samosa. With special masala potato. So let's start making Potato Masala Samosa ...

Ingredients:

- 200 gm Fine Flour / Maida (मैदा)
- 1/2 tsp Salt (नमक)
- 1/2 tsp Celery (अजवायन)
- 1 ltr Cooking Oil (खाना पकाने का तेल)
- 500 gm Boiled and Cleaned Potatoes (उबले हुए आलू)
- 100 gm Peas (मटर)
- 1/2 tsp Garam Masala (गरम मसाला)
- 1/2 tsp Dry Mango Powder (अमचूर)
- 1/2 tsp Chaat Masala (चाट मसाला)
- 1 tsp Crushed Ginger (पीसा हुआ अदरक)
- 1 tsp Crushed Garlic (पीसा हुआ लहसून)
- 4-5 pcs Chopped Green Chillies (हरी मिर्च)
- 1 cup Chopped Coriander Leaves (धनिये के पत्ते)
- 1 tsp Cumin (जीरा)
- 1 tsp Green Anise (मोटी सौंफ़)
- 1 tsp Coriander Seeds (धनिया)
- 1 pinch Asafoetida (हींग)

Methods:

- We would require 200 gm of Fine Flour (Maida) to make dough
- With 1/2 tsp of Salt,
- 1/2 tsp Celery,
- And 2-3 tsp Cooking Oil
- Mix thoroughly then add water as required to make dough
- Make sure dough is little harder than regular Chapati (Bread) dough
- Cover the dough and let is rest for 20 minutes
- Meanwhile we will prepare stuffing for Samosas
- "Stuffing Ingredients"
- 500 gm Boiled and Cleaned Potatoes,
- 100 gm Peas,
- 1/2 tsp Garam Masala,
- 1/2 tsp Dry Mango Powder,
- 1/2 tsp Chaat Masala,
- 1 tsp Crushed Ginger,
- 1 tsp Crushed Garlic,
- 4-5 pcs Chopped Green Chillies,
- 1 cup Chopped Coriander Leaves,
- 1 tsp Cumin,
- 1 tsp Green Anise,
- And 1 tsp Coriander Seeds
- "Roasting and Crushing Spices"
- Take a fry pan to heat
- And roast Cumin, Green Anise and Coriander Seeds for 2-3 mins on medium flame
- Once roasted let is cool then crush to coarse
- "Preparing Samosa Stuffing"
- Take a pan to heat and add 2-3 tsp Cooking Oil
- Crush or Break boiled Potatoes
- Add crushed Garlic, Ginger and chopped Green Chillies to pan
- Stir and fry for 10-15 seconds
- Then add Peas and fry for 2 more minutes
- Add 1 pinch of Asafoetida and stir
- Add Garam Masala, Dry Mango Powder and Chaat Masala as well
- Stir well and fry for a minute
- Then add crushed boiled Potatoes,
- And 1/2 tsp of Salt or to taste
- Stir and mix well by crushing Potatoes more
- After 3-4 minutes add coarsed roasted spices and chopped Coriander Leaves
- Stir and mix well for more minute
- Turn off the flame and keep stuffing aside
- "Let's check dough"
- Uncover the dough and chafe for a minute
- Roll it in to cylinder and cut in 10 pieces
- Make ball of each one
- Dip in Fine Flour and roll it to ovel shape bread
- Cut in two from center horizontally
- Apply some water from wet finger to edge where it has been cut
- Fold it like a cone
- Fill the stuffing
- Apply water again to all edges to close finally
- Bring higher edge towards smaller one and stick to close properly
- Similarly make all Samosas
- Take a deep pan to heat filled with 1 ltr of Cooking Oil
- Check the temperature of Cooking Oil
- It should be on medium heat
- Now fry Samosas in heating oil as much as it can be in pan
- Keep the flame to medium
- Fry until it gets crispy
- Take out fries Samosas and similarly fry all resting ones
