in this video of today I am telling the recipe for making brinjal pakoras. Eating it with a cup of tea in winter is something else. It is prepared within 10 minutes and the taste is such that you will make it again and again. So let's start making brinjal pakoras ...

Ingredients:

- 250 gm Eggplant (बैंगन)
- 1.5 cup Gram Flour (बेसन)
- 1 nos Onion (प्याज)
- 3-4 cloves Garlic (लहसुन की कलियाँ)
- 1 inch Ginger (अदरक)
- 1/2 tsp Coriander Powder (धनिया पाउडर)
- 1/4 tsp Red Chilli Powder (लाल मिर्च पाउडर)
- 1/2 tsp Dry Mango Powder (आमचूर)
- 1/4 tsp Cumin Powder (जीरा चूर्ण)
- 1/4 tsp Garam Masala (गरम मसाला)
- 1/4 tsp Turmeric Powder (हल्दी पाउडर)
- 1/4 tsp Black Pepper Powder (काली मिर्च पाउडर)
- 1/2 tsp Salt or to taste (नमक)
- 200 ml Mustard or Vegetable Oil (सरसों या वनस्पति तेल)
- 5-6 nos Green Chillies (हरी मिर्च)

Method:

- Take 250 gm of Fresh and Clean Brinjal (Eggplant)
- Slice it all in many thin pieces
- Keep aside and prepare batter to dip
- In a mixing bowl take 1 & 1/2 cup of Gram Flour,
- Puree of 1 Onion, 4-5 cloves Garlic and 1" Ginger
- Then add spices like:-
- 1/2 tsp of Coriander Powder,
- 1/4 tsp of Red Chilli Powder,
- 1/2 tsp of Dry Mango Powder,
- 1/4 tsp of Cumin Powder,
- 1/4 tsp of Garam Masala,
- 1/4 tsp of Turmeric Powder,
- And 1/4 tsp of Black Pepper Powder
- Also add 1 cup of chopped Coriander Leaves,
- And Salt to taste
- Now add little-by-little Water and mix to prepare thick batter
- "To make Bhajia (Fritters) more cripsy Rice Flour can be used additionally"
- In a pan take approx 250 ml of Mustard or Vegetable Oil and let it preheat
- Now dip each Brinjal slice properly one-by-one into batter and put into heating Oil
- Flip each pakodas (fritters) up side down once fried bottom side
- "Flip again and fry properly both sides"
- Once pakodas fried and turns golden brown then take it out
- Similarly fry all resting slices
- Pakodas without fried/roasted Green Chillies do not taste more yummy. So, if you like spicy dishes then you're gonna love this
- Take 5-6 Green Chillies, slice it from head to tail without detaching and put into oil to fry
- In a minute take all out and serve with pakodas
- Pakodas can be also served with Green Coriander sauce
